Raw beans, legumes, nuts, and seeds contain enzyme inhibitors that are normally destroyed with cooking. The nutrients can be released by soaking them (germination) or sprouting them.

Germination involves soaking in water for a specific amount of time. Although the recommended germination times vary from 2 hours (for cashews) up to one day (for mung beans), some raw foodists say that soaking overnight is sufficient and more convenient. It's important to start with dried, raw, preferably organic seeds, beans, legumes, or nuts.
Rinse beans, nuts, legumes, or seeds and place in a glass container. Add room temperature purified water to cover and soak at room temperature overnight. Mung beans, however, require a full 24 hours. Rinse a couple of times prior to use.

I myself have been on a raw diet for several weeks. I follow the 80% raw diet, where MOST of what i eat is raw food, while a very little bit consists of cooked vegetables, or occasionally, some cooked lean protein, like eggs or chicken, just to make sure that i always feel satisfied. I agree with what many people have already said, a raw diet is a lifestyle, more than a diet. It takes quite a bit of dedication but it can also be extremely fun and rewarding. I've found that one of the things that keeps me going on this diet is using the dehydrator to make fun snacks like sweet potato chips (yum!) and other dried fruit. So overall, I would recommend this diet if you feel you can't commit to it. If you feel like you can't, I'd encourage you to try to incorporate more raw fruits and veggies into your diet regardless. Oh, and I recently read an article that suggests that even one raw meal a day can be very beneficial, and considerably easier than going entirely raw. I'm surprised you advocate skipping breakfast and only having some water before lunch. I've read quite a bit of literature about how people end up eating more calories overall if they skip rather than eat a healthy diet. Also, where is the protein? I'm a great fan of raw fruits and vegetables - especially organic ones - but it is vital to have a balanced way of eating with enough of all the nutrients too.

Is this diet outlined here for just the 4-8 weeks as a type of cleanse to reset your metabolism and provide a boost to a more regular way of eating?

Thanks for the informative post. I knew vegetables were healthy, but never understood the real power of a raw food diet until now. I'm not sure I have the willpower to adopt an ALL raw foods diet, but I can definitely start including more every day. That has to help!

Thanks for the recipe for bruschetta. I've had it in restaurants but never knew how to make it myself. It sounds like an excellent way to get more raw vegetables in my diet. I have a bit of elevated blood pressure, and eating these things should help. My doctor says so and you confirm it! Great information.

I work with overweight individuals and help them make positive nutritional and exercise choices for increased vitality and physical ability and I completely agree that a raw food diet can help. You've touched on some of the most important considerations: increase in energy and aid in digestion. Many people with poor diets and extra weight have troubles with both, which make it hard to regain their health. Most, however, are not prepared to switch completely to raw food. I find that a structured approach to including it with some of their old favorites – or healthier versions of them – can be effective as well.

In the past I've struggled with my weight and with high blood pressure and cholesterol. My doctor had me on a few medications, which were expensive and had side effects I didn't like. A couple months ago I made the switch to a mostly raw diet - I too eat some chicken, fish and eggs like the other poster - and feel 500% better. Reduced my medications as well.

As long as you get enough protein in, the raw food diet is the best one ever to achieve really great results at the gym too. Get that body fat down to really low numbers so you look totally cut. So much more energy with all the fruits and vegetables too.

You're right about people doing out to get pills and potions and weird diet fads when they want to lose weight. I guess they're desperate. But this advice here is really all anyone needs if they want to lose weight and get healthy. Eat raw food the way Nature intended them to be, not processed stuff.

Just started a mostly raw foor diet - using my vitamix blender is brilliant - smoothies with carrots,garlic, broccoli, celery, ginger, apple, orage, banana, spinach plus a few cashews makes a delicious and satisfying drink. Your website inspired me. Michael.
